I am arriving from the US on Sunday April 30 to Hong Kong at night.

Need to take a train to Guangzhou the following day. What area of the City do I want to stay in to minimize my commute on a Monday morning while trying to see a bit of the city that night?

You are advised to stay at a hotel in the Yau Tsim Mong District, which will make you easier to Hung Hom Station next day. You can tour around the markets in Yau Ma Tei.
