I am a Dutch citizen planning to fly a round trip from Amsterdam to Beijing, but via 2 different countries. I will stay in Beijing for just 19 hours, and then fly back to Zürich. Will I be allowed into the country for this little time, in other words will I qualify for a transfer visa (since I'm flying such a strange route)?

If you travel such a route, you will qualify for the 24 hour direct transit in Beijing. Take it easy!
