Hong Kong - train to Guilin - Hong Kong

Hi, I am flying into Hong Kong with an Australian passport, staying for a couple of nights and going to train to shenzhen to bullet train to Guilin and stay for 3 nights in Guilin/Yangshuo to bullet train it back to Hong Kong. Do I need to apply for a Chinese visa? And if so, what is the process? Could I apply for a visa in Shenzhen?

You need to apply for a visa for that and you can apply for a tourist L type.
You cannot apply for it in Shenzhen. You should apply for it in your home country.
First thing is to prepare those materials containing your passport and its copy, a completed application form, a passport-sized color photo, transportation and accommodation arrangement.
Next thing is to submit the application to the CVASC to apply for the L visa.
