Unfortunately, your itinerary is not eligible for 240 hour visa free transit. You cannot depart from one and return to the same country/territory and you cannot use a train to depart from Hong Kong to mainland China. The solution for you would be to introduce nearby Macau into equation. Like this you can travel from HK airport to Macau and from there take a ferry (operated by TurboJet) to Shekou port in Shenzhen. This is eligible entry point. This option opens 240 visa free transit scheme that does not limits you to Shenzhen. You can also travel to other mainland Chinese destinations. After your stay you can take a train from Shenzhen to Hong Kong. As you can see a train is a valid option when exiting mainland China toward HK. If you decide for this option you will have to buy your train ticket in advance and really take that train you have bought your ticket for. You will be asked to present a ticket (booking confirmation sent to your email) in both Macau and upon arrival in Shenzhen. Hope this helps.

You are correct. The basic rule of 240 hour visa free transit requires that a visitor to mainland China has to have his/her immediate points before and after mainland China in two different countries or eligible territories (eligible territories are Hong Kong, Taiwan and Macau). This is the reason why you should enter mainland China from Macau and exit mainland China to Hong Kong. I understand that this option with Macau is a bit of a hassle, but this detail allows you to visit mainland China visa free under 240 hour visa free transit. Please, do not forget about the train ticket that I have mentioned in my previous post.
