Hong Kong Octopus Card to use from Dec. 25 to Dec.29 (8:25 A.M. flight to Phils.)

Places to visit:
Disneyland (Dec. 25), Ocean Park (Dec. 26), 10,000 Buddhas and to the night market(Dec.27),
The Peak and Harbour City (Dec.28), and on Dec, 29 is our flight early around 8:25 in the morning.
We will be staying in Mongkok, and we are 12 in our family.
What would be the best MTR card to use?

Another question: I visited HK 5years ago and still have the Airport Express Travel Pass - can I still use this? What should I do? Thanks.. :)
