I was wondering if you could work legally with a M visa for a temporary job?

Hello,
I got offered a job as a replacement (for 1 year) in the bar/ restaurant industry. I seem too young to apply for a Z type, so can I work legally on a M type and in that way still be in order with my paperwork, insurrance and social security back home? I am at the moment 23yrs old so is there a possibility I could work for one year on a M type and if my contract got extended after one year apply for a Z when I am 24 yrs old?

I know some people work in China with the M type legally, but they have to exit and enter abouth every three months because most M types only allow a stay duration of three months.I advise you to apply for the Z type as possible as you can if you want to work for more than one year.
