About:Guangzhou Baiyun International Airport

I am flying from Amsterdam to New Zealand and stopping for 7hrs here.

There is a factory I would like to see that they have told me would take a total of 1.5hrs to get there (totalling 3hr return trip). If I was there for say 1-2hrs, that would leave maybe 2hours buffer for in the airport. Is this achievable do you think as our bags will have been checked through from Amsterdam all the way through. Will we be able leave the airport firstly? And with speed trains etc will we make it?

Well, you don't have to recheck your luggage. And there are luggage counters in the airport. You don't need to worry about the luggage problem.
But I think the time will be tight. Generally speaking, in order to make sure that you can catch the next flight, it's suggested to stay at the airport. 1.5 hours is the estimated time; what if there is a traffic jam, which happens a lot in large cities ike GZ.
