from the USA, do I need a visa for a day trip to the Guangzhou Zoo?

Yes, of course. You need a single entry L visa for visiting that place since you enter GZ.

If you are in transit, i.e. arrival from one country and departure to another country, you are eligible for a 72 hours free entry visa.
