About:China Visa Application Procedure and Fee

Visa application from South Australia

Do I seriously have to mail my ORIGINAL passport to an embassy in another city, with no responsibility taken for loss, damage or anything? According to the Chinese visa site, I can't apply in Adelaide, South Australia.

If you plan to apply by post, then you have no choice but send all required documents to the CVASC branch. And you can also come to the CVASC branch and submit your application on your own.
