About:China Visa Application Procedure and Fee

I am going to Beijing and Shanghai via Hongkong and return to Sydney from Shanghai.

I got Australian passport .Do I need single entry visa or double? How long for it to be processed if I hand over the application personally for a standard processing? Do I need one for HongKong?

You are free of entry to HK. A single entry is enough if you will only enter mainland PRC one time, let's say to enter from HK then travel Beijing and Shanghai domestically. Regular processing takes 4 working days. Please check the holiday notice of the CVASC because the CNY is coming soon.

Sorry, PRC means China, CVASC is the visa centre you need to submit your aplication to, and CNY is Chinese New Year Holiday.
