About:China Visa Application in USA

I will be staying with family while in Hong Kong and making side trips into mainland china.

Do I use their address since I will not be staying at a Hotel? I will be staying with my son who is a US citizen working at the US Consulate in Hong Kong.

Yes, it is ok but you should provide an invitation letter issued by your son as well as copies of his residence card.
