Maitha, the first and the most important detail is that your itinerary is eligible if the immediate points before and after mainland China are in two different countries and it seems to be in your case as you are departing from UAE and your next country after China is Vietnam. Having such a long layover of more than 12 hours is fine and acceptable. If you want to exit the airport this is never guaranteed because this is not an inherent passenger right. In any case, your chance to be allowed to exit the airport are very good based on your very long layover. So, when you land in China, before the immigration, you will approach 24/240 hour visa free transit counter where you will apply for a temporary entry Permit by presenting your flight tickets and your hotel booking confirmation (if you plan to stay at the hotel only) along with a form that you will fill out. This application is free of any charge. After a short check you will receive a temporary entry permit and after that you will head to the immigration and finally to the city to have your time on your own. I wish you a success in obtaining a permit, but you should also be prepared for a negative outcome. Hopefully, the latter will not be the case.
