How can a apply for visa without flight ticket?

Hi, I'm planning a trip around the World. From China I want to go to Vietnam and Thailand, than come back to China (Hong Kong, Shanghai, Beijing). I really don't know how long I'll stay there which means I can't book fly tickets.
