You do have to apply for a China transit visa if you plan to go to the city to do some shopping during the stop at Guangzhou. There is also the possibility that you can get a 24-hour stay permit on your arrival at Guangzhou airport. However, to have a smooth trip, I advise you apply for a China trasit visa from the embassy or consulate of China in your living place in advance.  It usually takes four working days, but there are also express and ruch services provided. The visa fee is A$60.
