About:Chinese Embassy in Spain

I am a spanish citizen living in Japan, how should I apply for a chinese visa?

Should I do it through postal code to Spain? Or should I be able to do it somehow in Japan? (I am in Okinawa so I guess there are few embassys/consulates here)

You can submit your China visa application to Consulate General of China in Fukuoka. If you do not want to go in person, your visa application can be handed into the consulate by soneone entrusted or a travel agency.
