According to your statement, you need a double-entry China visa, if you have the invitation letter from Canton Fair and the invitation letter from a host company in China, you need to apply for business visa.

If you don't have the invitation letter, you can't write the major purpose of your visit to China for business trip. You can write the purpose for tourism on the visa application form.

Then you have to apply for a double-entry tourist visa for your itinerary, Shanghai- Guangzhou Canton Fair - Hong Kong - Shangai.
