1. Is there any ferry service from Hongkong to Xiamen, if yes, how/where can I take and buy the ticket.2. Second choice - by bus. How can I book and buy the bus ticket, take how long time from Hongkong to Xiamen ?3. Third choise - by train. Is there any china express from Hongkong to Xiamen ?

Well, there is no ferry or bus from Hong Kong to Xiamen. If you would like to take a train, you have take a train or bus from Hong Kong to Guangzhou firstly and then transfer to Xiamen by 14-hours train. Anyway, it is suggested that you fly to Xiamen directly.
