About:China Customs Declaration

I will leave for china next week and stay with my Chinese fianc until end of march.
I bought 20,000 CNY (approx $3,000) at a bank here in Norway. I would like to bring an additional $1,000 in Norwegian currency. According to travelchinaguide i can take $5.000 US dollars OR 20,000 CNY. Which "related documents" do I need and what are the economic consequences of declaring. Should I sell the CNY back to the bank and take $4000 in Norwegian currency? What if I have 19,000 or 10,000 CNY. I heard that bringing ANY Renminbi (Chinese currency) in cash is prohibited! I want to bring my desktop computer - box keyboard. (I will buy a monitor in China.) Will this be a problem?
Can I bring some cheese to China?

No, you can take at most CNY20,000 into China, no need to change the RMB to foreign currency. As for desktop computer, you can take it into China after paying some tax. For cheese, I advise you not take it, sinc eyou can buy it when you are in China.
