Where is the best area to stay with children to visit Disneyland and shopping

I think you could stay one night at the Disney Hollywood Hotel in the park, which is a paradise for children. Then, you could book a hotel in downtown area, such as Yau Ma Tei, Tsim Sha Tsui and Wan Chai, where the main shopping plaza are located.
