what is the average bag allowance for flying to hong kong from amsterdam

Generally, on China domestic flights, the free baggage allowance for each published adult-fare or half-fare passenger is as follow:

40 kg for first class fare tickets holders, 30 kg for business class fares ticket holders, 20 kg for economic class fare ticket holders.

You can take it for reference. Although different international airlines have different restrictions on luggage, it will not vary so much.
