You'd better get the China visa ready in Vietnam before you go to China, since there are strict requirements for applying for the on-arrival China visa.

Mr.Brian, in a matter of fact, China issues visa on arrival from ports of entry. However, the visa-on-arrival only be issued to aliens who are under emergencies, such as They are invited to participate in the installation of equipment or in the emergency repair of engineering projects; They are invited at the last moment by a Chinese host to come to China for a trade fair. You'd better apply for a China visa before going to China.
