Unfortunately, both of your itineraries in the form as you have presented them are ineligible for 240 hour visa free transit. The basic rule of 240 hour visa free transit requires that the immediate points before and after mainland China are located in two different countries or eligible territories (eligible territories are Hong Kong, Taiwan and Macau). As you can see in both of your itineraries your both immediate points are located in just one territory - Hong Kong. Also, when exiting from Hong Kong toward mainland China you cannot use a car, but a plane, ferry or a high speed train from West Kowloon station.
If you want to retain your original itineraries you will have to obtain a Chinese visa in advance. Other solution is to insert nearby Macau into your itinerary. Like this you can travel:
Hong Kong - Macau - Shenzhen (by ferry) or to Zhuhai city via Hengqin border crossing - Guangzhou - Hong Kong
Please, have in mind that if you decide for this solution, you cannot use a car to cross the border between mainland China and Hong Kong, but you can use a high speed train. You will have to buy your exit train ticket before you depart from Macau toward mainland China.
The very same thing is valid for your second itinerary.You can take a ferry from Hong Kong to Macau, fly from Macau to Beijing and exit mainland China to LA via HK. I know that this looks like a hassle, but this is really the only way to enjoy 240 hour visa free transit scheme for your planned visits to mainland China. I hope this helps.
