It is valid, but only because the day of entry into mainland China is not counted against your available 10 days. In other words, regardless of the part of the day when you enter mainland China, that particular day is not a day 1, but a day 0. Day one starts at 00:01 on the day following the day of your arrival.

If you have counted the day of entry into mainland China as day 1 and in reality it is not, your idea is eligible and you can use a train from Beijing to Hong Kong in that way. However, if you have counted the day of your entry as day 0 and you plan to exit mainland China on day 11, then your plan would be ineligible. It is the fact that when taking a train to exit mainland China toward Hong Kong it is a day/time of arrival into Hong Kong West Kowloon station that matters because the mainland Chinese and Hong Kong border authorities are co-located, one next to each other in the same facility of Hong Kong West Kowloon train station. In other words, your entire journey from Beijing until your arrival into Hong Kong West Kowloon is considered as a stay in mainland China.

Just to conclude, if you have counted the day of arrival into mainland China as your day 1 out of 10 days available for stay into mainland China, your travel plan is eligible, however if you have counted the day of arrival as a day 0, your travel plan is not eligible because that would be a clear overstay. If you enter mainland China on October 15, you can exit mainland China at Hong Kong West Kowloon station on October 25. However, if you enter mainland China on October 15, you cannot exit mainland China at Hong Kong West Kowloon station on October 26.
