The first and the most important detail is that your itinerary is definitely eligible for 240 hour visa free transit and you do not need any kind of visa.
I would like to inform you that to reach Shenzhen from Hong Kong under 240 hour visa free transit the only two eligible ways are to take a ferry from Macau Ferry Terminal in Hong Kong (also called Sheung Wan) or to take e ferry directly from HKIA Skypier to Shekou port in Shenzhen, the latter only if the airline you will use to reach HKIA is enrolled in Skypier scheme. Both ferry options are operated by CKS ferry company. It is very important to understand this segment because many think that it is eligible to take a train from Hong Kong to Shenzhen and similar.
The time is counted from 00:01 the day following the day of your arrival in Shenzhen. In other words, if you arrive in Shenzhen on December 2 (regardless of the time/part of the day), that day is not counted against your available 10 days (240 hours) you are allowed to stay in mainland China. The first day of your available 10 days starts on December 3.
As far as your departure/exit flight is concerned, it is the scheduled departure time from your last/final point of departure from mainland China, in your case from Shanghai. However, you should not count hours, but days. So, if December 2 was your entry date, that is not counted, your latest possible exit time has to be December 12, at 23:59. So, if your scheduled departure time from Shanghai is on December 12 at 23:59 then you are fine, but if it is on December 13 at 00:01, you are not eligible.
