Actually, you cannot take a train to exit Hong Kong in direction to mainland China, but your itinerary Hong Kong - mainland China - Japan is eligible for 240 hour visa free transit. In order to make your total itinerary definitely eligible, you will take a ferry from Hong Kong to Shekou port in Shenzhen. This is an eligible way, under 240 hour visa free transit, to exit Hong Kong in direction toward mainland China. When you arrive in Shekou, you will present your flight ticket to Japan and you will receive a temporary entry permit that allows you to stay in mainland China for up to 240 hours. After that you will proceed to Shenzhen North train station and take a train from there to Zhangjiajie. There are no, at least at the time being, direct flights between Zhangjiajie to Japan, but this is not a problem because you can depart from several other mainland Chinese airports toward Japan, however it is important to have that Japan bound ticket already bought as a confirmed one before you enter mainland China.
