No, you cannot take a train from Hong Kong to mainland China, at least at the time being. There are rumors that even this will be an eligible option, but until it is official, you cannot take it.
You can find an official list of all entry/exit ports, Guangdong included, at the website of the National Immigration Administration. It has English language portal and you will see on its website the title that says Visa-Free Transit Policies for Foreign Nationals. Click on that link and you will see the newest, official, complete list of all the ports that are currently available.
As far as the tickets are concerned, you can buy them online. The route from Hong Kong to Shekou is operated by CKS - Chu Kong Passenger Transport company from Hong Kong Macau Ferry Terminal. The route from Hong Kong to Nansha is operated also by CKS - Chu Kong Passenger Transport company, but from China Ferry Terminal. The route from Shekou to Macau (Outer Harbour) is operated by TurboJet company.
You will find TurboJet ticketing office at Hong Kong Macau Ferry Terminal where you can buy Shekou - Macau ticket in person. They also have a self service ticketing kiosk at China Ferry Terminal. So if you buy your Shekou to Macau ticket in person, that is it and you can proceed, but if you buy it online, you should print it out.
