Paula, since you are Polish citizens I would like to inform you that you do not need any kind of visa simply because Polish citizens do not need any kind of visa to enter, transit and stay in China for a period of up to 15 days. In other words, you can combine whatever combination with the flights as you want since there is no limit for you in this regard.
During your first layover since your transit time is really inconvenient to exit the airport, you do not need to do anything. You will basically just walk from one to the other gate. You will not be a subject of immigration and customs control, but will just pass a short security check between your two gates, so no forms, no anything. Your passports and a boarding pass for your flight to Vietnam will be enough.
During your second layover, regardless whether it will be a short or longer version, you will fill out an arrival card on board the plane and when you land you will proceed with your passport and arrival card directly to the immigration. Basically, this is it. Have a nice journey.
