If i was to fly from London -> Beijing (3 days) -> Japan/Osaka (5 days) -> Tokyo (7 days) -> Shanghai (3 days) -> London, would that be eligible for the visa?

Your entire itinerary is definitely and undeniably eligible for 144 hour visa free transit twice.
