Unfortunately, you are not eligible for 144 hour visa free transit with the itinerary you have presented. The basic rule of 144 hour visa free transit clearly states that the immediate points before and after your mainland Chinese destination have to be in two different countries or eligible territories. Eligible territories are Hong Kong, Taiwan and Macau.

As you can see, your both immediate points before and after your mainland Chinese destination are in the same territory - Hong Kong. This is regarded as a round trip ticket and not a transit.

If you only can, you are advised to use Macau for one of your legs of travel. For example, it would be ideal if you could fly from Shanghai to Macau directly. When you land in Macau, you will easily reach Hong Kong. So, your new itinerary will be:

Sydney - Hong Kong - Shanghai - Macau - by ferry or bus or whatever to Hong Kong - Sydney

With the itinerary I have presented, you will be eligible for 144 hour visa free transit in wider Shanghai area and no visa is required. I can just hope that you can adapt your itinerary to be in line with 144 hour visa free transit rules.
