Travel to / from HKG-Guangzhou

Hi. I will go to Guangzhou by speed train from Hongkong. I'm staying in Mercure guangzhou beijing road pedestrian street hotel,which station is better to choose east or south railway station? And how many time i should spare after i landed to Hongkong to get the high speed train? Thank you.
