Unfortunately, your itinerary is not eligible for any kind of visa free transit scheme because your segment:

Amsterdam - Shanghai - Amsterdam

Is just a return trip and not a transit. The basic rule of 144 hour visa free transit says that the immediate points before and after your Chinese destination have to be in different country or eligible territory. As you can see, the immediate points in your case are in the same country - Netherlands.

In order to be eligible, you should slightly adapt your itinerary to look like:

Amsterdam - Shanghai - Paris

or

Amsterdam - Shanghai - London

Or something similar.
