Bluhm, you did not mention the length of your stay in Guangzhou. If your stay in Guangzhou is shorter than 24 hours, you will be covered by 24 hour visa free transit and you do not need any kind of visa. Also, if your stay is longer than 24 hours, but shorter than 144 hours (6 days), you will be eligible for 144 hour visa free transit and you also do not need any kind of transit.

However, the most important details is, if you are the citizen of Germany, then you do not have to bother about this visa free transit staff because the citizens of Germany can enter China absolutely visa free for stays long up to 15 days. In other words, you will not need a visa in any case.

If your transit in Guangzhou is a short one, for example of up to 5 hours or similar, then you will wait for your onward flight at the airport and you will be free from any checks with the exception of security check on the way to reach your gate for your flight to Sydney.
