This is very easy because it is visible that you have properly understood the scheme:

- Your route is perfectly eligible for 144 hour visa free transit in entire Guangdong province and you are definitely allowed to take a ferry to exit mainland China toward Hong Kong
- You will buy your ferry ticket online through CKS - Chu Kong Passenger Transport Company and you will depart from Shekou port in Shenzhen to Hong Kong (Macau Ferry Terminal). There are three daily, direct departures on this route. Please, keep in mind that you will have to buy your ticket before departure from Taiwan and to print out that ticket. You will have to have it in hard copy ready to present it where needed. Also, you will have to take exactly that ferry you have bought your ticket for.
- You do not have to book anything from Hong Kong. What will you do when you leave mainland China is not of mainland officers interest any more.

Yes, Jiangmen port is one of the eligible exit ports but I don't know where online to buy the ticket.
