No, you will not be able to do that because mainland China and Hong Kong have separate immigration policies. At the moment when you exit mainland China to Hong Kong, your visa ceases to be valid and you will need another visa to enter mainland China again. If you have a visa with two entries or more entries, in that case, you will be able to enter mainland China, but you should have in mind that in this case, your two entry visa, if you have such, will be fully used.

Also, it is important to mention that you are theoretically eligible for 5 days Shenzhen visa at your return to Shenzhen that could be obtained upon arrival at the border crossing, but so far it is evident that many visitors with different ASEAN citizenship are quite usually refused a Shenzhen visa on arrival. Your case might be different because you will have a Chinese visa that has expired just a couple of days before, so your chances to get Shenzhen VOA are much better. However, nobody can guarantee that you will be granted a Shenzhen VOA. This is more for your information and you are the one who will make decisions.

It depends on your visa. If it is a single-entry visa, then you can not use it again. It is okay if it is a double or multiple-entry visa.
