Your itinerary is perfectly eligible for both Shenzhen 5 days visa on arrival and also for 144 hour visa free transit in wider Beijing transit area consisting of Beijing and Tianjin cities and entire Hebei province. As far as Hebei is concerned, you can use 4 airports in wider Beijing & Tianjin & Hebei area to reach the area from Hong Kong: Beijing Capital, Beijing Daxing, Tianjin Binhai and Shijiazhuang Zhengding airports. If I am not wrong, only the 3 first mentioned have direct flights to/from Hong Kong, so count of using one of them. Also, your flight from Hong Kong to this area, regardless which airport will you decide to use, has to be a nonstop one.
After your 6 days long stay within this area, you can leave to any third country of this world with the exception of Hong Kong. Hong Kong is not eligible because it would be a return ticket and not a transit. So, you can fly from Beijing to US, South Korea, Macau, Japan... Wherever you want, but not in Hong Kong. Also, your flight from Beijing to some third country is not allowed to have a transfer of any kind in Hong Kong.
One more detail... You are fine with boat from Hong Kong to Shenzhen, but keep in mind to take a morning boat, preferably the one departing at 09:00 because of the opening hours of Shekou visa office: 9:00 - 13:00 & 14:30 - 16:30. Also, you can return from Shenzhen to Hong Kong by more convenient high speed train from Futian station to West Kowloon station in Hong Kong. This is not an eligible way to enter Shenzhen, but you can exit comfortable in this way.
Also, you should be aware that a Shenzhen VOA cost for US citizens is a bit pricey i.e. 956 CNY. Just not to be surprised.
