Your itinerary is eligible for 144 hour visa free transit in entire Guangdong province, but instead of train, you will have to take a ferry. There is no eligible exit train option for this scheme at all.
So, before your departure for Guangzhou, you will buy a ferry (through CKS - Chu Kong Passenger Transport Company website) for a route Nansha (just south from Guangzhou) to Hong Kong or Shekou (in Shenzhen) to Hong Kong. Also, you will print out your ferry ticket and have it with you. In the end, you really have to take exactly that ferry you have bought the ticket for before your departure for China.
