Amsterdam-Shanghai-Paris allowed for 144 hours free transit?

Yes, this route is eligible for 144 hour visa free transit in wider Shanghai area.

You should just take a care that both of your flights do not have any additional landing within mainland China and that you do not have any additional apperances of Amsterdam and Paris within your itinerary. For example:

If your first flight is:

Amsterdam - Shanghai, your second flight cannot contain Amsterdam like:

Shanghai - Amsterdam - Paris

I am telling you this because only the immediate points before and after your Chinese destination matter and they have to be in different countries.
