About:240-hour Visa-free Transit in Shanghai, Zhejiang, and Jiangsu

Only 1x HK stopover 2h in a return flight

If I book a return flight: Bangkok - HK - (2h stopover, luggage checked through) - Shanghai - Bangkok, would that work to be eligible for the 144H transit visa? (Dutch Passport)

Yes, your itinerary is definitely eligible for 144 hour visa free transit. Please, have in mind that this is not 144 hour transit visa, but visa free transit, so there is no visa at all.

Everything that matters within your itinerary is a segment:

Hong Kong - Shanghai - Bangkok

So, you should just take care that your flights, Hong Kong - Shanghai and Shanghai - Bangkok do not have any additional landing within mainland China and your flight Shanghai - Bangkok is not allowed to have a landing in Hong Kong.

Hong Kong in this case plays a role of a third country/region, so if you fulfill the criteria I have mentioned, you will be able to enjoy 144 hour visa free transit in wider Shenghai area.
