(Because I wont have my boarding pass yet.)Because of this, does it make more sense to come into china via HK, show my HK to china boarding pass, and then my booked ticket to US?

You are overthinking this. Where you will go after Hong Kong is of no concern to Shanghai immigration. Their primary duty is to verify that you have a ticket that leaves Mainland China to a third country or territory in six days.
