USA - Shanghai - USA

Hey thanks for the help.

Does this work if I have a layover in Hong Kong on the way to Shanghai (or on the way back)? I have heard layovers don't count as the 3rd country?

Every stop counts. Hong Kong counts as a third country.

Awesome. Do you think there is a chance for me to be denied if I arrive US-China, show my incoming ticket as from the US, and then my outbound ticket as to US via hongkong? (Because I wont have my boarding pass yet.)

Because of this, does it make more sense to come into china via HK, show my HK to china boarding pass, and then my booked ticket to US?

You are overthinking this. Where you will go after Hong Kong is of no concern to Shanghai immigration. Their primary duty is to verify that you have a ticket that leaves Mainland China to a third country or territory in six days.
