No, you don't need any kind of visa because your itinerary will be covered by 24 hour visa free transit.
You will print out your flight tickets and have those printouts with you. Also, you will declare at check-in in Vietnam that you will travel to Seoul via Shenzhen using 24 hour via free transit. If you are traveling on a single ticket (same airline) your luggage will be probably tagged all the way to Seoul, but you should ask at check-in about this detail, just for a case. After a short check of your tickets, you will be allowed to board the plane.
Upon your arrival you will just follow the signs "international transit/transfer" and you will apply for a temporary entry permit. In reality, it will be done almost automatically. In reality, you will clear all the formalities and then proceed to the boarding gate for your flight to Seoul.
