Rick, unfortunately, your itinerary is not eligible for 240 hour visa free transit. The basic rule of 240 hour visa free transit requires that the immediate points before and after mainland China are locate in two different countries or eligible territories (eligible territories are Hong Kong, Taiwan and Macau). As you can see, your itinerary has both immediate points in just one eligible territory and that is Taiwan.
In order to make your itinerary eligible one it would be necessary to introduce some other country/eligible territory after your visit to mainland China. For example if you could only fly from mainland China directly to South Korea. Also, you can think about skipping a layover in Taiwan in your first segment.
This is something that will be probably impossible because I assume that you have your tickets already bought. In that case, if it is not too late, you can apply for a Chinese tourist visa or to buy a round trip flight Beijing - Hong Kong - Beijing... Like this your whole itinerary would look like:
US - Taiwan - Beijing (short stop) - Hong Kong - Beijing (your long stay in mainland China) - Shanghai - Taiwan - South Korea - US
