About:10-year China Visa

Would he apply for S2 or S2 visa? How soon must he stay away before returning bad to Zhuhai?

I have HK ID and China home return permit. I intend to buy a flat in Zhuhai and settle down there. My spouse of 40 years has Australian citizenship, would he be able to apply for a 10 year S2 visa? Would he need to leave China after every 120 days. How long he has to be away before able to return to Zhuhai?

You can ask your spouse to apply for an S1 visa, which allows a relatively long stay and one doesn't need to exit and re-enter.

If you have a Residence Permit for Hong Kong and Macao Residents (a Chinese ID lookalike with the same 18-digit ID number) then it may be possible for your spouse to settle with a family-based residence permit issued by Zhuhai. You may want to contact the National Immigration Administration in Zhuhai for more information.
