About:144-Hour Visa-Free Transit

Australian passport cruising Hong Kong to Shanghai 2 days then on to Busan and Kobe and Tokyo

Does the 144 transit rule apply for shore excursions and do I apply from Australia?

Yes, the 144h visa-free transit applies, but you need to apply for it upon arrival in Shanghai.
