If you are Canadian citizens or citizens from 53 eligible countries and if your itineraries are eligible, you are definitely allowed to do exactly what you have mentioned. Also, you have to know that both Beijing and Shanghai now have 144 hour visa free transit that has replaced 72 hours visa free transit a couple of years ago. Also, these are not visas, but 144 hour visa free transits. There are no visas at all.
Your itineraries are allowed to have only one stop within mainland China on each of your travel legs, so you should construct your itineraries to fit the mentioned condition.
