About:Shanghai Travel

We fly from London (25/03/2020) to Shanghai and land 26/03/2020 and locate to a hotel.

We leave Shanghai by cruise ship on 28/03/2020 to cruise to Beijing where we stay on ship whilst visiting by day Beijing and leave Beijing by ship on 02/04/2020. Therefore is the 72 hour Visa an option for us?

I think you aren't eligible for 72/144 hour visa free transit based on your route. You need to apply for a tourist visa.
