Indeed, the easiest way how to arrive from Hong Kong to Shenzhen is by obtaining a Shenzhen VOA on one of three possible places. Please, be informed that if you intend to take a ferry, only Shekou port has VOA office (working hours: 9:00 - 13:00 & 14:30 - 17:00). Also, you should be aware that your flight from Shenzhen to Paris is not allowed to have any additional landing within mainland China of any kind.
To return back from Shenzhen to Hong Kong, your flight from Paris to Shenzhen has to be nonstop one, i.e. it is not allowed to have any additional landing within mainland China of any kind.
Anyway, to use Shenzhen airport as a transit point for Hong Kong is allowed only by using 144 hour visa free transit. In other words, you can take a ferry from Shenzhen Shekou port only after, at least, 24 hours and 1 minute after your scheduled landing in Shenzhen. This means that you will have to spend one overnight in Shenzhen.
If you intend to travel to Hong Kong, you can use a ferry departing from Shenzhen Shekou port and keep in mind that you will have to book a ferry ticket before your arrival in China. To book a ticket for Hong Kong, you will use CKS - Chu Kong Passenger transport website. When you book your ferry ticket, you will receive an e-confirmation that you will have to print out and to bring that printout with you. It will serve you as a proof of your transit and also to collect your real paper ticket at Shenzhen Shekou terminal.
You have to take exactly that ferry you have bough your ticket for.
There is no need to travel to Macau because the same rule, 24 hours + minute is also applied for Macau.
