If your cruise is "37 Night Hawaii Guam and East Asia Pacific Crossing Cruise", then you will need a Chinese tourist (L) visa obtained in advance, but not because of your last port of call in Shanghai, but because of the portion:

South Korea (Jeju) - China (Tianjin) - South Korea (Incheon)

As you can see, this is a round trip and you will need a visa for this portion. Anyway, Canadians are eligible for long term (up to 10 years) multiple entry visa, so you should apply for one at appropriate time.
