Yes, you can enjoy 144 hour visa free transit in Shanghai under the following conditions:

- Your itinerary has to follow the pattern: A country - B country (Shanghai, China) - C country
- Your cruise is not allowed to have its last port of call, immediately before Shanghai, in mainland China
- Your flight is not allowed to have any additional landing within mainland China and in the country where your cruise will have its last port of call, immediately before Shanghai

So, if the above conditions are fulfilled and you can easily check in your itinerary to see if that is true, you will be definitely eligible for 144 hour visa free transit in Shanghai area. This visa free transit option is free of any charge.

This is fine, but as far as I know, you will have a port of call in Korea before you arrive in Beijing.

So, if I'm right, you will need a Chinese tourist (L) visa because of this portion:

Korea - Beijing - Korea

If you are a Canadian citizen, the good detail is that Canadian are eligible for long term (up to 10 years) and multiple entry visas, so you should apply for one at appropriate time.
