About:144-Hour Visa-Free Transit

Flights with Stop over outside of China

If I fly Amsterdam to Shanghai via Paris (2-hour layover) and then less than 144 hrs later Shanghai to Singapore and then Singapore to Amsterdam a day later, will that qualify? Is the Amsterdam - Paris - Shanghai leg seen as indirect or direct?

Country immediately before and after what matter. It doesn't matter how long either.
Its viewed as Paris > Shanghai > Singapore. Just make sure Shanghai to Singapore is non-stop
