There is no transit visa. It is 24/144 hour visa free transit and you don't need to apply for it in advance.

No, unfortunately, Guatemalan citizens are not eligible for 144 (not 143) hour visa free transit. You are allowed to use 24 hour visa free transit or in other words, there should not be more than 24 hours during your transit in Xiamen, counting from your scheduled arrival in Xiamen, until your scheduled departure from Xiamen. So, if your entire transit time in Xiamen is less than 24 hours, you can travel using this visa free transit option and you don't need any kind of visa.

Actually, yes. Since your itinerary has two consecutive stops within mainland China and Fuzhou airport is not eligible for any kind of visa free transit, your by far the best option is to obtain a Chinese transit (G) visa at the Chinese consulate in Los Angeles.
